Happy Wednesday! Do you ever have those weeks where you feel like you should have a lot to do, but you just can’t think of what it is? That’s how I feel. I’ll probably remember it on Friday morning or any day at work at 4:45 and then panic. I’ll let you know how it goes.
I’ve been talking a lot lately about how I can’t get my life together enough to pack a healthy lunch, so I’ve been trying to make things that will last a long time in the fridge so I can just throw it in a Tupperware container and be on my merry way. Last week, I share my recipe for Caprese Quinoa Salad, which is just delish. Today, I’ve got yet another quinoa recipe, but this time it’s a little sweeter!
I originally found this recipe on Layers of Happiness, but I halved the recipe and omitted a few ingredients! Here’s what you’ll need:
-2 cups cooked quinoa (1 cup dry)
-1 chicken breast, shredded
-1 tbsp olive oil
-1 tbsp lemon juice
-1 tsp. ground ginger
-3/4 tsp. ground cumin
-1/2 tsp. salt
-2 handfuls fresh arugula, washed and chopped
-2 chopped green onions
-1/2 cup chopped cilantro
-1/2 cup dried pineapple
-1/2 cup dried cherries
-1/2 cup dried coconut flakes
Here’s what you do:
1.First, mix together the quinoa and chicken in a large container with a lid. I used my Corningware dish-it’s really big and has a glass lid. Plus it makes me feel more like an adult than a bowl with foil on the top.
2. Mix the olive oil, lemon juice, ginger, cumin, and salt in with the quinoa and chicken until evenly combined.
3. Then, add the arugula, green onions, cilantro, pineapple, cherries, and coconut and mix together! A tip on the dried fruit: I would suggest Trader Joe’s or the healthy food section of your grocery store. The pineapples and cherries I found in the aisle with the canned fruit were covered in sugar. Like, they were little fruit crystals. It was just a little too sweet for me, and I ended up picking around them while eating this. So try to find some that don’t have as much added sugar!
So easy and so delish! This is half of the original recipe, and I ate it for lunch about 4 days and had it with dinner a couple of nights as well. It is HUGE and lasts for a while! One night I had it with a salmon burger for dinner- so yum!
