Happy Wednesday! I was in Austin Monday and Tuesday for work, so it’s been kind of a strange week for me. Like, I’ve been thinking about work things and having meetings, and I’ve been in an office, but not my office. It’s kind of throwing me off, so I will be glad to get back into my routine tomorrow! And get back to not eating trash for every meal! I cooked dinner for myself last night, so that was good, but I doubt it offset the entire bag of Swedish fish I ate on the drive home. Oops.
One way I like to eat a bit healthier is by starting the day with a smoothie! I typically have my green smoothie every morning, but sometimes I like to shake it up a bit! My mom gave me the idea for this coffee smoothie, and it’s quite delicious!
Here’s what you need:
-4-5 coffee ice cubes (we will discuss this momentarily)
-1/3 cup soymilk
-1 splash coffee creamer
-1 tsp cocoa powder
-1/4 tsp cinnammon
-1 tbsp almond butter
-1 tsp chia seeds
Here’s what you do:
1.This smoothie does require a bit of thinking ahead, but not too much! You’ll need to make coffee ice cubes. Usually, I’ll make an extra large pot of coffee on a Saturday, and what I don’t drink, I will pour into ice trays and freeze it overnight! Most ice trays make 12 cubes, so I can usually get 3 smoothies per tray.
2. Layer all the ingredients in a blender (I use a single-serving blender), and combine!
3. Enjoy! I love the texture of this smoothie- it’s like a Frappuccino but without all the cream and sugar. I’ll sometimes make this on Saturday mornings instead of drinking hot coffee! I’ve thought about drinking it along with my regular coffee but that may be too much.
