We’re halfway through the week! Plus most of us have a long weekend ahead, which is just the best. I haven’t quite decided what I’ll be doing this weekend, but I’m sure it won’t be all that much, honestly. If you’ve been around here long enough, you know that my favorite weekend pastime is to sleep in and get up and make a delicious breakfast. This past weekend, I was inspired by a few things I’d seen on Pinterest and my leftover chicken apple sausage, and threw together a savory quinoa bowl, and it was fabulous. So I decided to share it with you!
Here’s what you’ll need:
-1/2 cup quinoa, cooked (it’s extra easy if this is leftover!)
-1 chicken apple sausage link (you could use another breakfast sausage or even bacon if you’d like! I just really loved the chicken apple gouda sausage I found at HEB)
-salt & pepper to taste
Here’s what you do:
- First, prep the quinoa (if it’s not already cooked) and the sausage. For quinoa, cook 1 parts dry quinoa with 2 parts water, bring to a boil, then cover & simmer for 15 minutes. For the sausage, I boiled mine for 15 minutes then seared it in a skillet with some butter (because we can’t get too healthy)!
- Next, prepare your egg. I soft boiled mine (boil water, drop the egg in for 7ish minutes for a solid white but runny yellow center!), but you could poach, fry, or even scramble yours if you wish!
- While the egg is cooking, dice your avocado.
- It’s time to assemble! Start with the quinoa on the bottom, then sprinkle a little mozzarella on top, so it gets nestled between all the warmth & melts. Then arrange the sausage, egg, and avocado around, and sprinkle parmesan cheese on top! Sprinkle salt & pepper on your egg, snap a pic for your Saturday Snap Story, then mix it all up so you get deliciousness in every bite!
Easy, right? I have to be in the mood for a savory breakfast, and this one was perfect! However, I will say I wish I would have drizzled some sriracha on top, because we all know srirach makes everything better. Plus, the quinoa & chicken sausage made me feel v healthy and great about myself, which is always a good thing. This may just become a new Saturday morning staple!
